Happy New Year 2011, and try this cake recipe
"Bolo-rei"
300 g wheat flour
15 g baker’s yeast
150 g sugar
200 g nuts and crystallized fruits
4 eggs
50 g butter
1 tbsp port
1.5 dl milk
1 egg yolk

- Dilute the yeast in warm milk
- Fold in 50 g of the flour and knead well with your hands
- With the remaining flour make a pyramid, leaving a well in the centre
- Put the 4 eggs, sugar, butter and port in the well
- Mix these ingredients together without including the surrounding flour and add the flour that has been resting with the milk and yeast
- Mix everything and include the surrounding flour until you achieve an even dough
- Chop half of the crystallised fruit into small pieces and fold them into the dough
- Place the dough in a bowl for about four hours so it rises
- Arrange the dough on a baking tray in the shape of a crown and place a round metal object in the centre to prevent it from closing
- Decorate the dough with the rest of the crystallised fruit and brush with egg yolk
- Place in the oven over low heat
-Spread with jam, if liked, to give an attractive glint
